Redcurrant muffins – from bush to belly

Our redcurrant bush is beautifully bejewelled at the moment. We’ve been eating them with meringues, breakfast cereal and this morning I found a recipe for redcurrant muffins on this website. Perfect to take to my cousin’s party on the beach on Sunday.

60g unsalted butter/marg, melted

175g plain white flour

2 tsp baking powder

1/2 tsp salt

100g caster sugar plus some for sprinkling

1 large egg

120ml milk

125g fresh redcurrants

Preheat oven to 180˚. Sift flour, baking powder together into a bowl, add sugar. Beat egg with milk and melted butter. Add to flour, and fold in quickly. Add redcurrants, and try not to burst them! Spoon into a 12 cup muffin pan, and sprinkle some caster sugar over the top. Bake for 20-25 minutes until golden brown.

    Mmmm Chris, those muffins look mouthwateringly good! This is NOT good for my pre holiday diet. Why am i torturing myself looking at them? Just signed up to Rosemary Conley online in last ditch bid for bikini body (well, cover-all-cossie body). Love from Pauline xxx
